We’ve waited a bloody long time for this summer to get started. To be honest, we’re not even sure it’s really here, you know, to stay, but we’re willing to go out on a limb and talk ICED tea!

The Arnold Palmer is a simple, virgin drink of half lemonade, half iced tea. It’s sweet and tart, refreshing and a great pick-me-up. Our version is all that and way more. We start with our Southbrook Berry Tea, add a serious dose of fresh lemon juice and a few fresh raspberries. And because it’s not too sweet, it’s a fantastic starting point for a cocktail; we think vodka – natural, lemon, or raspberry—or white rum would be great choices.

Better make a big batch, this stuff is good!


3 ½ tsp (10 g) Southbrook Berry Tea
4 cups (1 L) just boiled water
¼ cup (60 mL) sugar
2/3 cup (150 mL) freshly squeezed lemon juice
2 cups (500 mL) cold water
Fresh raspberries for garnishing


  • Into a heat-proof jug or tea pot add the tea, sugar, and hot water.
  • Allow to steep for 15 minutes; stir to dissolve the sugar, then strain through a fine sieve into either a serving jug or container with lid.
  • Add the lemon juice, cold water, stir, and chill.
  • To serve, fill glass with juice cubes and a few fresh raspberries, top up with iced tea.

Makes about 8 cups (2 L)
